How Air Fryers Work
Air Fryers work by circulation of hot air around the food.
A fan inside the unit circulates the hot air, at a high rate of speed, around the food you are "frying" in it.
They cook the food from every angle, so no oil is needed at all to fry your food!
What happens is it ends up producing a crispy layer on your food by what is called the Maillard reaction.
(This is merely a chemical reaction between amino acids and Reduction of sugars that browns food and gives it a distinct flavor - IE: When you toast bread.)

Now, many people will argue that when you are cooking with air, instead of oil, you are not actually frying the food...
I have to agree with this, the standard word association for "frying" means to cook something in fat. While it is true that you can cook with an air fryer without using any oil at all, that kind of kills the point of it being fried...
What it does do, and why it works so well as far as being able to eat while consuming less fat is that you do not have to saturate your food with grease.
A light mist, or tossing the food in oil before you cook it will actually give it the fried food consistency and taste without the dripping, soggy mess that most associate with fried foods...
And the best part? Because it is not saturated in the fat during the cooking process, it is much more healthy for you and you can consistently have 50-90% less fat per servings with the same food you were going to have anyway!
